The timing is especially difficult because demand for pistachio-based treats has been unusually strong. Social media trends, including the popularity of Dubai-style chocolate bars and pistachio-filled desserts, have helped turn the nut into a sought-after ingredient, particularly among younger consumers.
That combination of weather-related crop losses and stronger demand is creating the conditions for a sharp price increase.
